Ingredients: makes 1 pint
5 or so medium sized tart apples - We recommend Macintosh.
1/2 cup walnuts
1 cups apple juice or cider
1 teaspoon ground cinnamon
3/4 teaspoon ground allspice
1/4 teaspoon ground cloves
1/ 2 cup sugar
Wash, core and quarter apples.
Place the apples in a saucepan along with the juice or cider.
Bring to a boil then cover the mixture and simmer for about 30 minutes, making sure to stir occasionally to prevent sticking.
Now put them in food processor or in blender with the walnuts and blend them for about 3 mins.
Return about 10 cups back to the saucepan.
Stir in sugar, and spices.
Bring to a boil and then reduce heat Leave uncovered and over very low heat cook for about one and a half hours until mixture is very thick.
Be sure to stir periodically and frequently to prevent burning on the bottom.
Let it cool then pour them into the jars and … enjoy the long lasting digestion. : )
